Great for a snack or even for a lunch - especially when you can add healthy and filling topping: put black beans, sour cream, salsa, corn into small containers to sprinkle on top! We also like to brown ground beef with taco seasoning and add caramelized onions to make it a light dinner.

INGREDIENTS
GF tortilla chips
shredded cheddar or Mexican cheese
Optional: Black beans, corn, guocamole or avacado chunks, sour cream, salsa

STEPS
Preheat the toaster oven or oven to 350 degrees F.
Spread the amount of tortilla chips you want onto the tray. (I like to put parchment paper under it to prevent the cheese from burning on the tray).
Sprinkle the desired amount of cheese on top of the chips and place in the oven.
Cook about 5 miutes: watch for when the cheese is melted, then remove.
Serve immediately or allow to cool before placing in airtight container to bring for lunch.
Top with desired optional ingredients.
