Easy Quiche-Your-Way
This is great to serve for a brunch. It can also be eaten at room temperature for lunch the following days.

INGREDIENTS
1 refrigerated pre-made GF pie crust (see notes)
1 TBSP butter
1/2 cup thinly slices shallots (or vidalia, yellow, white or green onions)
6 large eggs
3/4 cup of heavy cream or milk
3/4 tsp salt
1/4 tsp black pepper
1 cup of chopped whatever flavor quiche you want such as:
10 oz frozen spinach thawed and squeezed free of water OR 10 oz. frozen broccoli thawed OR 10 oz. frozen mushrooms thawed OR GF cooked ham OR combinations of the above.
1 cup of your choice of shredded cheese (cheddar or gruyere or anything else)
optional: pinch of nutmeg

STEPS
Preheat oven to 375 degrees F
In a large bowl, whick together eggs, milk, salt and pepper, and nutmeg.
Heat the butter in a pan over medium-low heat. Cook the onions until soft and translucent, about 8 minutes.
Layer the cooked onions in the bottom of the pie crust.
Add the cup of whatever flavor you are using (broccoli, ham etc) onto the crust.
Sprinkle the cheese on top of the crust.
Pour the egg mixture over the top.
Bake for 35-40 minutes until cooked through and center is completely set. Let cool for 5-10 minutes before serving.
