Buffalo Cauliflower Bites

A vegetarian version of chicken wings - great for a snack or even a side dish! Dip into a bowl of ranch dressing for the perfect combination.

Buffalo Cauliflower Bites

Prep Time:

INGREDIENTS

  • 1 large head of cauliflower, cut into florets

  • 1/2 cup GF cup for cup flower

  • 1/2 cup water

  • 2 tsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp salt

  • 1/4 tsp black powder

  • GF cooking spray (like Pam Original)

  • 1/4 to 1/2 cup hot sauce, depending on your taste buds

  • 2 TBSP butter, melted

  • 1/2 TBSP lemon juice

  • Ranch (or Blue Cheese) dressing for dipping

  • Carrot and celery pieces (optional)

STEPS

  1. Preheat oven to 450 degrees F.

  2. Grease a baking sheet with cooking spray or line with parchment paper.

  3. In a large bowl, whick together GF flour, water, garlic powder, paprika, salt and pepper until smooth.

  4. Add cauliflower to the batter and mix fully.

  5. Place the cauliflower pieces on the baking sheet in a single layer and not touching each other. Bake about ten minutes and then turn over. bakeuntil ligtly browned, about 20 minutes. 

  6. In another smaller bowl, combine the hot sauce, melted butter and lemon juice until well mixed. Brush the cauliflower with the sauce.

  7. Return cauliflower to the oven and bake until they get more medium brown, about 15 minutes. 

  8. Serve with ranch dressing, and celery and carrots if you want!
