Broccoli Cheese Soup
You may have loved it at Panera or elsewhere. Now you can have it at home or in a thermos for lunch! Maybe it isn't the lowest in fat... but it has broccoli, so that is healthy!

INGREDIENTS
1/2 cup chopped onions
1/2 TBSP minced garlic
2 TBSP butter
1/2 TBSP corn starch
32 oz. (4 cups) chicken stock
10 oz. (6 cups) broccoli florets
1 cup matchstick carrots
6 cups shredded American cheese
1/2 tsp salt
1/3 tsp nutmeg
32 oz. (4 cups) half & half

STEPS
In the bottom of a large pot, heat butter.
Saute the onion, garlic, salt and add flour. Cook and stir until onion is translucent (about 8 minutes).
Add the chicken stock and nutmeg. Bring to a simmer.
Add carrots and broccoli to the pot. Cook until tender.
Add the cheese slowly, stirring while it melts into the pot.
Pour the half & half in, stirring over medium/low heat until everting is mixed well and heated. Do not boil.
