Breakfast Pancake Sandwich – a Pan-wich!!
A great way to use up leftover pancakes. If you need a gluten free bread in a pinch OR in mass quantity for breakfast or school lunches, then gluten free pancake sandwiches ("panwiches") are helpful and different. INGREDIENTS
cooking spray
1 egg, raw
1 slice ham, sliced, regular
2 GF pancakes (4" dia) pancakes, buttermilk, prepared from recipe
1 slice Cheese, cheddar
2 tbsp syrup, maple - GF

STEPS
Pancakes:
Make pancakes… Toast pancakes in toaster and place one pancake on plate.
Filling:
Heat frying pan over medium heat and lightly spray with cooking spray. Crack the egg into the pan and break the yolk. Cook the egg to desired firmness. Warm sliced ham in the pan while assembling sandwich. Place egg on top of pancake. Pour 1 tablespoon of maple syrup over egg, place the cheese on top of egg, and a slice of warmed ham (or bacon or turkey bacon) on top of the cheese. Top the sandwich with the second pancake and pour another 1 tablespoon of maple syrup over the top of the sandwich.
Other Fillings:
Peanut butter & Jelly: Just smear one side of one pancake with jelly and one side of the other pancake with peanutbutter. Clap together and voila!
